Preheat your oven to 180°C / 350°F / Gas Mark 4
(Finished quantity depends on your cutter size)
4 oz / 100g Unsalted butter
3 tbsp Golden syrup
12 oz / 350g Self raising flour
1 to 2 tsp Ground ginger
4 oz / 100g Sugar
1 egg

1. Put the butter and syrup in a pan and gently heat it smaller kids will need an adult to do this bit
2. Weigh out the flour, sugar and ground ginger and put them in to a bowl.
3. Pour the melted butter and syrup mix on to the dry ingredients and stir it in.
4. Beat the egg and add it to the mixture.
5. Knead the mixture in to a smooth dough and leave it to cool.
6. Lightly flour your surface and then roll the dough out to approx 1/2 cm / 5mm thick.
7. Put the gingerbread men on to a greased tray and bake them on the middle shelf of your oven for approx 8 minutes. The time will depend on your oven.
8. Let the biscuits cool before decorating them.
Water icing is very simple to make just take a few tablespoons of icing sugar and gradually mix in a little cold water until you get the consistency you require. Remember if you are going to add food colouring you only need a tiny drop. Add the colouring before you mix in the water.
